Trained as a pharmacist; he rose to prominence as a nutrionist and the promoter of potatoe cultivation in France. From 1796-1813 he was inspector-general of the health service; and introduced anti-viral vaccination in the army and investigated hygiene conditions on ships. He is commemorated in Paris by an avenue and a métro station; and almost any dish in French cuisine with a potato topping includes the term 'parmentier' (eg hachis parmentier; the equivalent of Shepherd's pie).
